「ミシュランガイド東京 2008」
寒い！僕が住んでいた7年間で、11月に仙台に雪が積もったことなんてない。
東京も一日中寒かったな。
さて、本日発表された「ミシュランガイド東京 2008」の格付け。
「ミシュランガイド東京 2008」、3ツ星は8軒 (YOMIURI ONLINE)
3ツ星を獲得したJoel Robuchonは、前身の「タイユバン・ロブション」の時代に一度、叔父に連れられて行ったことがある。
店に入ると、ダイニングとは別部屋となったロビーでまず食前酒を出される。
そこでしばらく待ち、やっとメイン・ダイニングへ通される。
それから、のんびりメニューを眺めて注文する。
一皿ずつ食し、メインが終わるとフロマージュ、ワゴンデザート、そしてコーヒー。
店のスペースも時間も、都内とは思えないのんびりした使い方だった。
美味しいものを食べるのに、せわしく通り過ぎるように食べて出て行ったりしない。
ずっと前から時間を空けて予約し、のんびり時間をかけて食べる。
間にたっぷり時間も取り、会話も含めて記憶にじっくりと残る。
すっごい贅沢をした。
ちなみに、2ツ星の「ピエール・ガニェール」、1ツ星の「ベージュ」にも、それぞれ実は1回づつ行ったことがある。（こう話すと、完全に自慢話かな…。）
もちろん、自腹では行けないので、その辺は誤解なく。
でもやっぱり、ロブションの記憶が、一番鮮明に残っている。
タイユバンが撤退し、ロブション単独のプロデュースに変わったが、キッチリ星三つをせしめた。
